REFINE, SMOOTH, AND POLISH
The Yakushi 3000/8000 Grit Whetstone is a dual-sided water stone designed for refining and polishing kitchen knives that already have an established edge. It provides two progressively finer sharpening stages in one compact stone.
Begin with the 3000-grit side to refresh and smooth a maintained edge, then move to the 8000-grit side for lighter finishing passes and a more polished cutting feel. A bamboo base and angle guide are included to support a controlled sharpening setup.
Use the 3000-grit surface to refresh an edge that is already reasonably sharp, smooth marks left by a medium-grit stone, and prepare the blade for finer polishing.
Follow with light passes on the 8000-grit surface to further refine the edge and create a smoother finish for precise kitchen cutting.
The included bamboo base supports the stone during sharpening and provides a dedicated platform for use on a clean, stable countertop.
The angle guide can help newer users practise a more consistent blade position. Always follow the sharpening guidance recommended for your particular knife.
CHOOSE THE RIGHT STARTING GRIT
This stone is well suited to refining a knife that still cuts but no longer feels as smooth or precise as it should.
Start with a lower-grit stone when the knife is extremely dull, chipped, or requires reshaping. Progress to this stone only after the primary edge has been restored.
Serrated knives and specialized single-bevel blades may require different tools or techniques. Follow the knife manufacturer’s instructions or consult an experienced sharpener.
COMPARE THE GRIT RANGES
Coarser stones are commonly used for repairing chips, reshaping an edge, and restoring very dull knives before finer sharpening.
A medium-and-fine combination provides a practical starting range for routine sharpening followed by general edge refinement.
REFINING CHOICE
This finer combination is intended for maintaining, smoothing, and polishing an edge that has already been properly established.
A CONTROLLED SHARPENING ROUTINE
Wet the stone according to its supplied instructions and place it in the bamboo base on a clean, stable surface. Keep water nearby so the sharpening surface remains appropriately lubricated.
Maintain the sharpening angle recommended for your knife and guide the full cutting edge across the stone using light, controlled pressure. Work both sides appropriately for the blade’s geometry.
Clean the blade and stone before changing sides. Use lighter, consistent finishing passes on the 8000-grit surface, then rinse and carefully dry the knife.
PROTECT YOUR SHARPENING STONE
Rinse away loose abrasive material and metal residue with clean water. Avoid household detergents or chemical cleaners.
Allow the stone to dry naturally in a shaded, well-ventilated location. Do not use direct heat or return a damp stone to its base or storage container.
Sharpening can gradually wear the stone unevenly. If the surface becomes dished, restore it with a compatible flattening stone or lapping plate before continued use.
Refining maintained kitchen knives, smoothing an established edge, polishing after medium-grit sharpening, and routine fine-edge care.
Do not rely on this fine-grit stone alone for major chip repair, extensive reshaping, severely dull blades, or knives requiring specialized sharpening tools.
Work on a stable surface, keep fingers clear of the cutting edge, use controlled pressure, and follow the sharpening guidance provided for your specific knife.

TWO FINISHING STAGES, ONE STONE
Refine First. Polish Second.
Use the 3000-grit side to refresh and smooth an established edge, then progress to the 8000-grit side for lighter finishing passes. The included bamboo base supports a stable, controlled sharpening setup.
SHARPENING QUESTIONS, ANSWERED
Learn when to use each grit, which edges require a coarser starting stone, and how to clean and store your whetstone correctly.
The 3000-grit side refreshes and refines a kitchen knife with an established edge. The finer 8000-grit side is used afterward for lighter finishing passes and a smoother, more polished cutting feel.
Not as the first sharpening step. Very dull, chipped, or damaged knives generally require a lower-grit stone to restore the primary edge before progressing to 3000 and 8000 grit.
Wet and prepare the stone according to its supplied instructions, as preparation requirements can vary between sharpening stones. Keep the working surface appropriately lubricated with clean water while sharpening.
Rinse the stone with clean water after use and allow it to air-dry completely in a shaded, well-ventilated location. Do not use household detergents or store the stone while it is still damp.
