The best angle is the one your knife and use can support

A more acute edge can reduce cutting resistance, but it also leaves less material supporting the apex. A wider edge can add support, but may increase resistance. Neither result is determined by angle alone: alloy, heat treatment, thickness behind the edge, abrasive finish, cutting task, board and technique all affect performance.

If the edge has been stable and cuts well, matching the existing bevel is usually the safest starting point. If the maker specifies an angle, use that guidance before any general chart.

The cutting edge is a system, not a single number. These parts explain why two knives sharpened at the same nominal angle can behave very differently.

Important: the included-angle column assumes a symmetric double bevel. A 70/30 asymmetric double bevel or a traditional single-bevel knife cannot be described simply by doubling one side's angle.

Use the chart as orientation. Use these factors to make the actual decision.

1. Maker guidance

Start with the knife's manual, product specification or manufacturer support. It is the most relevant source for the original design.

2. Existing bevel

If the edge is stable and performs well, matching its current bevel avoids unnecessary metal removal and major reprofiling.

3. Steel and heat treatment

Hardness alone is not enough. Alloy, microstructure, toughness and heat treatment influence how the apex resists rolling and chipping.

4. Blade geometry

Thinness behind the edge, grind and bevel arrangement affect cutting more broadly than the edge angle by itself.

5. Tasks and technique

Controlled slicing on boneless food asks less of an apex than hard contact, lateral twisting or aggressive board impact.

6. Edge history

Recurring chips or rolls are useful evidence. Review angle, pressure, tasks, board and technique before simply sharpening again.

Bevel geometry

Not every knife has two equal sides

Identify the construction before choosing an angle or counting strokes. Converting bevel geometry casually can change steering, food release and edge support.

Common

Symmetric double bevel

Both sides are sharpened at roughly equal angles and proportions. A 15° angle per side produces an approximately 30° included edge.

Verify first

Asymmetric double bevel

Both sides are sharpened, but not equally. Preserve the maker's intended ratio and angles rather than automatically converting the edge to 50/50.

Specialized

Traditional single bevel

A large front bevel and a hollow-ground back require a different method from ordinary alternating strokes. Seek model-specific guidance or an experienced sharpener.

Optional detail

Micro-bevel

A few controlled finishing strokes at a slightly wider angle can support the apex. Use it deliberately, not as an accidental result of lifting the spine.

You rarely need to invent a new angle. First look for the specification, then use the bevel itself as evidence.

Use the marker method

Color the edge bevel with a permanent marker, make a few very light test strokes, then inspect where the ink was removed.

Use a guide or gauge

An angle guide can help build consistency. A goniometer or professional measurement offers a more direct check when precision matters.

Reading the marker: ink removed mainly at the shoulder usually means the spine is too low; ink removed mainly at the apex usually means it is too high. Adjust slightly and test again. Coin stacks are unreliable as a universal shortcut because blade height, taper and coin dimensions vary.

A burr is evidence that sharpening has reached the apex, not a goal to make as large as possible. Use a safe inspection method and keep fingertips behind the cutting edge.

A fine stone does not replace the coarse or medium work needed to repair chips, correct a rounded bevel or apex a severely dull knife. Use the least aggressive grit that still works efficiently.

Common angle problems and what they mean

The bevel looks roundedYour spine height is probably changing through the stroke. Slow down, shorten the motion and use a guide or marker check.
Ink remains at the apexThe angle is likely too low to reach the cutting edge. Raise the spine slightly and retest with light strokes.
